cup dry bread crumbs, divided
1 tablespoon vegetable oil
1 medium onion, finely chopped
2 cloves garlic, minced
1 teaspoon dried thyme
3 cups warm cooked brown rice
1 medium carrot, peeled and grated
1/3
cup chopped fresh parsley
1/4
cup grated Parmesan cheese
3 tablespoons light soy sauce
2 eggs
What to Do
Preheat the broiler. Coat a rimmed baking sheet with nonstick cooking spray. Place 1/2 cup bread crumbs in a shallow dish; set aside.
In a large nonstick skillet, heat the oil over medium-high heat. Sauté the onion, garlic, and thyme for 4 to 5 minutes, or until the onion is tender; transfer to a large bowl.
Add the remaining ingredients except the reserved bread crumbs; mix well.
Form the mixture into six 1/2-inch-thick patties and coat with the reserved 1/2 cup bread crumbs. Place on the baking sheet and broil for 6 to 7 minutes per side, or until golden and heated through.
