Our diabetes-friendly version of Homestyle Smashed Potatoes doesn't sacrifice any flavor or hearty texture. The creaminess comes from our secret ingredient - greek yogurt - which makes a delicious, and healthy, substitute for sour cream.

What You'll Need

  • 6 medium-sized red potatoes (about 2 pounds), washed and cut into chunks
  • 4 garlic cloves, peeled
  • 1/3 cup non-fat Greek yogurt
  • 1/4 teaspoon onion powder
  • 2 tablespoons butter
  • 1 teaspoon Salt (optional)
  • 1/4 teaspoon black pepper

What to Do

  1. Place potatoes and garlic in a soup pot and add enough water to cover. Bring to a boil over high heat. Reduce heat to medium and cook 20 to 25 minutes, or until potatoes are fork-tender; drain and place in a large bowl.
     
  2. Mash potatoes and garlic along with remaining ingredients, until smooth and well blended. Serve immediately.

My whole family loved these! I was glad because I've been making mashed potatoes my whole life but now that I'm retired with arthritis, I really don't want to peel all those potatoes. These smashed potatoes are going to be my new signiture potato!
