Golden Polenta

No matter how you go about cooking it, you'll find that our Golden Polenta is a delicious alternative to the typical bread, rice, and pasta you may be used to eating. You might even say it offers a "golden opportunity" to mix up your meals!
What You'll Need
- 4 cups water
- 1/4 cup ( stick) butter
- 1 1/2 teaspoon salt
- 2 cups fine-grind yellow cornmeal
What to Do
- Place the water, butter, and salt in a large saucepan and bring to a boil over high heat. Remove from the heat and slowly whisk in the cornmeal until smooth and no lumps remain.
- Spoon the mixture into a 9" x 5" loaf pan that has been coated with nonstick cooking spray, packing down firmly. Allow to cool for at least 1 hour, or until firm. Invert the pan over a cutting board to remove the polenta. Cut into thick slices and serve.
Notes
Polenta can be served as is and can also be sautéed, grilled, and even deep-fried. It also makes a great base for grilled vegetables or chicken.
