What You'll Need
- 2 teaspoons olive oil
- 1/2 cup chopped onion
- 1 cup cherry tomatoes, cut in half
- 2 cloves garlic, minced
- 1/4 teaspoon black pepper
- 1 pound large, raw shrimp, peeled and deveined
- 1 (10-ounce) bag fresh spinach
What to Do
- In a large skillet, over medium heat, heat oil until hot. Add onion, tomato, garlic, and pepper; cook 5 minutes or until vegetables are softened.
- Add shrimp to skillet and cook 3 minutes or until pink in color.
- Add spinach and cook 2 to 3 minutes or until wilted, stirring occasionally. Serve immediately.
