We've got a shellfish recipe that will have the whole family running for the dinner table! Not only is it tasty, but it's diabetes-friendly too! After one bite of our Anytime Shrimp Special, everyone will rave that it's one of the best shrimp recipes! And what makes it special you ask? It's great because you don't need a special occasion to make it! It's perfect for weeknights, weekends, and holidays! But the best part? It only takes 10 minutes to make. Now that's really special in our fast-paced lifestyles!

What You'll Need

  • 2 teaspoons olive oil
  • 1/2 cup chopped onion
  • 1 cup cherry tomatoes, cut in half
  • 2 cloves garlic, minced
  • 1/4 teaspoon black pepper
  • 1 pound large, raw shrimp, peeled and deveined
  • 1 (10-ounce) bag fresh spinach

What to Do

  1. In a large skillet, over medium heat, heat oil until hot. Add onion, tomato, garlic, and pepper; cook 5 minutes or until vegetables are softened.
  2. Add shrimp to skillet and cook 3 minutes or until pink in color.
  3. Add spinach and cook 2 to 3 minutes or until wilted, stirring occasionally. Serve immediately.

I think this recipe could use a little more seasoning to it than just pepper.
