What You'll Need

  • 2 teaspoons olive oil
  • 1/2 cup chopped onion
  • 1 cup cherry tomatoes, cut in half
  • 2 cloves garlic, minced
  • 1/4 teaspoon black pepper
  • 1 pound large, raw shrimp, peeled and deveined
  • 1 (10-ounce) bag fresh spinach

What to Do

  1. In a large skillet, over medium heat, heat oil until hot. Add onion, tomato, garlic, and pepper; cook 5 minutes or until vegetables are softened.
  2. Add shrimp to skillet and cook 3 minutes or until pink in color.
  3. Add spinach and cook 2 to 3 minutes or until wilted, stirring occasionally. Serve immediately.
