Caramelized Onion Soup

By the name alone, this soup is sure to tempt you to make it not only for yourself, but if you're having a dinner party. Our healthy, easy yet elegant Caramelized Onion Soup will make you a kitchen hero.

What You'll Need

  • 6 yellow onions, thinly sliced
  • 1/4 teaspoon dried thyme
  • 2 tablespoons sherry cooking wine or dry sherry
  • 4 cups water
  • 4 (4-gram) packets sodium-free beef broth seasoning

What to Do

  1. Coat a large saucepan with cooking spray. Over medium heat, cook onions and thyme about 15 minutes, or until onions begin to brown.

  2. Reduce heat to low and continue cooking about 25 additional minutes, or until onions turn a rich brown color, stirring frequently. Add wine and bring to a boil. When wine is evaporated, add water and broth packets and bring to a boil. Reduce heat to low and simmer about 25 additional minutes.
