A bowl of our Slow Cooker Squash Soup will certainly keep you feeling warm and cozy. This simple soup recipe is a fall-favorite, especially since it's loaded with some of our favorite seasonal ingredients. 

What You'll Need

  • 3 pounds butternut squash, peeled and cut into 1-inch chunks
  • 1 apple, peeled, cored, and diced
  • 1 cup chopped sweet onion
  • 2 cups low sodium, fat-free chicken broth
  • 1 cup lowfat milk
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

What to Do

  1. In a 4-quart or larger slow cooker, combine squash, apple, onion, and chicken broth.
  2. Cover and cook on HIGH 3 hours, or until squash is soft. Place mixture in a blender or use an immersion blender; puree until smooth.
  3. Pour mixture back into slow cooker and add remaining ingredients; mix well. Cook 15 minutes, or until heated through.

The recipe looks wonderful. However,I do not have a slow cooker and would like directions for preparing this soup on the stove. Thank you.

Hello Rachel! For making this recipe on stove top, you start by roasting the squash in the oven, for about 45 to 60 minutes. There are recipes on our page for roasted butternut squash that can help! After your squash is roasted, puree it in a blender. Then transfer the contents to a a pot on your stove top and heat for 15 minutes. Enjoy!
