Smooth and rich and cheesy, our Velvety Cauliflower Soup delivers spoonful after spoonful of satisfying taste. And if you're doing a double-take because you can't believe this is a diabetic soup recipe - well it is!!

What You'll Need

  • 1 cup chopped onion
  • 5 1/4 cups reduced-sodium, fat free chicken broth
  • 5 cups cauliflower florets
  • 1/2 cup reduced fat shredded Cheddar cheese

What to Do

  1. Coat a large saucepan with cooking spray. Over medium heat, cook onions until tender.

  2. Add broth and cauliflower; bring to a boil. Reduce heat to low, cover, and simmer until cauliflower is tender, about 20 minutes. Cool about 10 minutes.

  3. Transfer in batches to food processor or blender and process until smooth. Garnish with cheese and serve immediately.
