For a spicy kick of flavor, you'll love using Italian turkey sausage in this tasty recipe. Plus, reduced-fat cheese and another sneaky ingredient (pssst...it's cottage cheese!) makes these The Best Stuffed Chilies you'll ever eat!

What You'll Need

  • 4 poblano chilies
  • 1/2 pound hot Italian turkey sausage, casings removed
  • 1 cup reduced-fat cottage cheese, drained
  • 1/2 cup reduced-fat shredded mozzarella cheese

What to Do

  1. Preheat oven to broil. Line a baking sheet with aluminum foil. Split poblano chilies with sharp knife, remove seeds, but leave stems on. Rinse and pat dry on paper towels. Place on baking sheet.

  2. Broil chilies on all sides 4 to 5 inches from heat, until skin chars. Remove and place in plastic bag and seal. When cool, carefully peel skin away.

  3. Reduce oven to 350 degrees F.

  4. In a medium skillet over medium-high heat, brown sausage. Combine sausage with cottage cheese. Spoon sausage mixture into chilies and sprinkle each with 2 tablespoons mozzarella cheese.

  5. Bake 15 minutes or until cheese melts; serve immediately.
