Bacon-Topped Asparagus

Bacon?? As part of a diabetic diet? Absolutely, if it's turkey bacon! Our smoky flavored Bacon-Topped Asparagus is simply irresistible!

What You'll Need

  • 1 pound asparagus, trimmed
  • 2 tablespoons fat-free vinaigrette dressing
  • 4 slices turkey bacon, cooked, crumbled

What to Do

  1. Place asparagus in a medium skillet and add enough water to cover. Bring to a boil, reduce heat to low, and cook until just tender. Remove and drain.

  2. Sprinkle asparagus with dressing and lightly toss. Cover and refrigerate about 30 minutes.

  3. Sprinkle with bacon and serve.
