Broccoli and Mushroom Stir-Fry

Any finicky veggie eater will tell you that if they must eat a veggie… ones that are crisp and full-flavored like those that are stir fried, are their top choice. If that's you or someone you know… this healthy Broccoli and Mushroom Stir-Fry should be a hit!

What You'll Need

  • 1 package (8-ounce) fresh mushrooms, sliced
  • 2 scallions, sliced
  • 1/4 cup slivered almonds, toasted
  • 1 pound fresh broccoli florets

What to Do

  1. Coat a wok or skillet with cooking spray. Over high heat, stir-fry broccoli.

  2. Add 1 tablespoon water, cover, and cook until broccoli is crisp-tender, stirring frequently. Add more water if needed. Remove broccoli and set aside.

  3. Spray wok with additional cooking spray then add mushrooms and scallions. Cook until liquid from mushrooms is evaporated, about 3 minutes, stirring occasionally. Return broccoli to wok and cook just until mixture is hot, stirring frequently. Sprinkle with almonds and serve.
