cup chopped green or red bell pepper
1/3
cup chopped onion
1 clove garlic, minced
2 cups cubed yellow crookneck squash
2 tablespoons water
Dash cayenne pepper
What to Do
Coat a nonstick skillet with cooking spray; preheat over low heat. Add bell pepper, onion, and garlic; cook 3 to 4 minutes, or until tender. Remove from skillet and set aside.
Add squash and water to skillet. Simmer over medium heat, covered, 8 to 10 minutes, or until water evaporates and squash is crisp-tender.
Add bell pepper mixture and cayenne pepper to skillet. Cook over medium heat until squash begins to brown, stirring occasionally.
