Mix It Up Squash

This colorful, healthy mixture of veggies turns ordinary yellow squash into something special. Our Mix It Up Squash sauté is sure to have everyone asking for seconds.

What You'll Need

  • 1/3 cup chopped green or red bell pepper
  • 1/3 cup chopped onion
  • 1 clove garlic, minced
  • 2 cups cubed yellow crookneck squash
  • 2 tablespoons water
  • Dash cayenne pepper

What to Do

  1. Coat a nonstick skillet with cooking spray; preheat over low heat. Add bell pepper, onion, and garlic; cook 3 to 4 minutes, or until tender. Remove from skillet and set aside.

  2. Add squash and water to skillet. Simmer over medium heat, covered, 8 to 10 minutes, or until water evaporates and squash is crisp-tender.

  3. Add bell pepper mixture and cayenne pepper to skillet. Cook over medium heat until squash begins to brown, stirring occasionally.
