What you're going to love about our good-for-you Roasted Veggie Blend is that little extra sprinkling of crumbled feta cheese, because it adds tasty texture AND flavor.

What You'll Need

  • 2 zucchini, quartered lengthwise
  • 1 (1-pound) eggplant, peeled, cut in 1/2-inch slices
  • 1 red onion, cut in 1/2-inch slices
  • 1/2 cup crumbled feta cheese

What to Do

  1. Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil and coat with cooking spray.

  2. Spread vegetables on prepared baking sheet.

  3. Bake 20 to 25 minutes; stir once halfway through cooking. Cut into bite-size pieces, sprinkle with cheese, and serve immediately.
