Crispy BBQ Chicken Tenders

What You'll Need

  • 4 (2-ounce) chicken tenders, each cut into 3 pieces
  • 1/3 fat-free Italian dressing
  • 1/2 cup whole wheat bread crumbs
  • 4 tablespoons sugar-free barbecue sauce

What to Do

  1. Place chicken pieces in a large resealable plastic bag. Add dressing and rotate bag gently to coat chicken completely.
     
  2. Refrigerate 2 to 3 hours. Remove tenders from bag; discard excess dressing.
     
  3. Preheat oven to 375 degrees F. Coat a baking sheet with cooking spray.
     
  4. Place bread crumbs in a shallow dish; coat chicken with crumbs. Let stand 1 minute, then transfer to baking sheet.
     
  5. Bake 10 to 15 minutes, or until chicken is no longer pink in center. Serve with barbecue sauce.

Notes

Just a tip: It'll be easier to cut the chicken tenders if they're slightly frozen.

I've seen this recipe elsewhere (not a diabetic version) where you add italian dressing mix to the breadcrumbs, dip it in butter then roll int he crumbs. this sounds better than that one, though.

But I do have a suggestion/idea - would a 50/50 mix of finely chopped pumpkin sunflower seeds not be a viable healthy alternative to all manner of breadcrumbs?

We haven't tried using seeds as an alternative for bread crumbs, so we can't say whether or not it would work for this recipe.
