What You'll Need

  • 1/2 (10-ounce) package frozen chopped spinach, thawed, squeezed dry

  • 1 (1-pound) package frozen salmon fillets, thawed according to package directions, drained, and patted dry
  • 4 teaspoons lemon juice

What to Do

  1. Preheat oven to 375 degrees F. Tear 4 rectangular pieces of aluminum foil; coat each with cooking spray.

  2. In a small bowl, mix spinach and cream cheese.

  3. Place each salmon fillet on foil piece. Spread 1/4 cup spinach mixture over each fillet. Fold and seal foil over fillets.

  4. Bake 30 minutes or until salmon flakes easily. Sprinkle each fillet with 1 teaspoon lemon juice and serve immediately.
