Lemon Pepper-Crusted Tuna

Did you know that you can easily tell the difference between fresh and previously frozen tuna? Fresh tuna steaks are red or pink in color, without any hint of browning. This Lemon Pepper-Crusted Tuna is great when cooked for just a couple of minutes, because of the moist texture and delicate flavor.

What You'll Need

  • 2 tablespoons lemon juice
  • 1 tablespoon wasabi paste*
  • 1 teaspoon grated lemon peel
  • 1 teaspoon black peppercorns, crushed
  • 4 (4-ounce) tuna steaks

What to Do

  1. In an 8-inch square baking dish, combine the lemon juice, wasabi paste, lemon peel, and crushed peppercorns; add the tuna steaks and marinate for 20 minutes, turning occasionally.

  2. Heat a grill pan or skillet over high heat. Place the tuna in the pan and pour the marinade over it.

  3. Grill for 2 minutes per side for rare, or to desired doneness. Serve the tuna steaks as is, or slice thinly and fan out the slices to give it a fancier presentation.

Notes

*To make this a gluten-free recipe, use pure wasabi paste.
