What You'll Need

  • 1 cup finely chopped onion
  • 2 cups shredded carrots
  • 1/4 cup pine nuts
  • 2 cups cooked brown rice

What to Do

  1. Coat a medium nonstick skillet with cooking spray. Over medium heat, cook onion, carrots, and pine nuts until onions are tender, stirring occasionally.

  2. Stir in brown rice; cook until heated through.
