Curried Red Potatoes

Looking for a new flavor spin for a side of potatoes? This fork-tender potato dish gets its tempting flavor from a tasty combination of curry powder and parsley. Say goodbye to boring potatoes and hello to new flavor combinations!
What You'll Need
- 1 pound small red potatoes, scrubbed
 - 1 teaspoon canola oil
 - 1/4 teaspoon curry powder
 - 3 tablespoons chopped fresh parsley
 
What to Do
- Quarter potatoes and cut into 1-inch wedges. 
 - Boil potatoes for 10 minutes, drain.
 - Coat a medium skillet with cooking spray. Heat oil over medium-high heat; add potatoes. Turn potatoes to coat with oil. Cook for 12-15 minutes until potatoes are brown and tender, stirring occasionally. (Check for tenderness with fork. Skins should be crisp.)
 - Combine curry powder and parsley and sprinkle over potatoes. Heat 1 to 2 minutes, stirring to coat evenly.
