What You'll Need

  • 1 tablespoon butter
  • 1 cup uncooked long- or whole-grain rice, divided
  • 2 chicken bouillon cubes
  • 2 cups water
  • 3 scallions, sliced
  • 1/2 of a medium-sized red bell pepper, finely chopped
  • 1/8 teaspoon black pepper

What to Do

  1. In a large skillet, melt the butter over high heat. Brown 1/2 cup rice in the butter, stirring constantly.

  2. Add the remaining 1/2 cup rice, the bouillon cubes, and water, and bring to a boil. Reduce the heat to medium-low, cover, and simmer for 18 to 20 minutes.

  3. Stir in the scallions, and the red and black pepper, and cook until heated through.
