Here's a healthy snack idea that you can make at the beginning of the week for snacking on all week long. Our Easy Banana Bites are made with just 3 simple ingredients and are especially good when you're craving just a couple of bites of something sweet.
What You'll Need:
3 ripe bananas, cut into 1/2-inch slices
cup sugar free chocolate chips, divided
teaspoon vanilla extract
What To Do:
- Coat 2 mini muffin tins with cooking spray or line with paper liners. Line a baking sheet with wax paper.
- Place banana slices on baking sheet, cover, and freeze 1 hour, or until frozen.
- Place banana slices in food processor or blender and pulse until smooth and creamy. Stir in 1/2 cup chocolate chips and the vanilla. Evenly spoon into muffin cups. Sprinkle remaining chips on top of each banana bite.
- Cover and freeze 3 to 4 hours, or until frozen.
