The healthy benefits of spinach and protein-packed eggs, make for a soul-soothing bowl of Florentine Chicken Soup. Our Test Kitchen specially selected a hard full-flavored cheese like Parmesan, to add lots of taste without worry.

What You'll Need

  • 3 1/2 cups reduced-sodium fat-free chicken broth
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 (10-ounce) package washed baby spinach
  • 1 hard-boiled egg, chopped
  • 2 tablespoons grated Parmesan cheese

What to Do

  1. In a large saucepan over medium-high heat, bring broth, onion powder, and pepper to a boil. Reduce heat to low and simmer.
     
  2. Stir in spinach just until it wilts. Garnish servings with chopped egg and Parmesan cheese.
