Some like it hot, and some don't, so if you want to turn down the heat in our hearty Round 'Em Up Bean Soup, simply use a mild-flavored sausage.

What You'll Need

  • 1 teaspoon olive oil
  • 1 pound hot Italian turkey sausage, casings removed
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 3 (15.5-ounce) cans Great Northern beans, undrained
  • 3 1/2 cups reduced-sodium chicken broth
  • 1 (14-ounce) can diced tomatoes, undrained
  • 1 teaspoon dried basil
  • 1/2 teaspoon black pepper

What to Do

  1. In a large soup pot, heat oil over medium-high heat. Add sausage, onion, and garlic, and cook 5 to 6 minutes, or until no pink remains in sausage, stirring frequently to break it up.

  2. Add remaining ingredients and bring to a boil. Reduce heat to medium-low and simmer, uncovered, for 30 minutes.

Very good. Something different, although I believe the serving size is incorrect. Maybe if you only ate 1/2 cup

Hi there! The correct serving size for this recipe is 1/2 cup. Enjoy!
