What You'll Need

  • 5 onions, thinly sliced
  • 1 cup unsweetened apple juice
  • 4 cups sodium-free beef broth
  • 1 cup water
  • 1/4 cup dry red wine
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 6 thin slices French bread

What to Do

  1. Coat a soup pot with cooking spray.

  2. Add onions and saute over medium heat 12 to 15 minutes, or until browned.

  3. Add juice, broth, water, wine and pepper. Mix well and bring to a boil. Reduce heat to low and simmer for 15 minutes.

Made this once - will definitely make it again. Only changes were I cut the recipe down for two of us (cut it in half - had enough for 4 servings) and used home made croutons instead of bread slices. Excellent onion base! Well done!

After I make this reciepe I will rate it. It sounds great as I love onions.
