Bell peppers take center-stage in our healthier-for-you Italian Stuffed Bell Peppers. Each bell pepper is stuffed with just the right amount of cheesy goodness and Italian seasoning to leave you feeling down-right satisfied.

What You'll Need

  • 1 cup cooked whole grain rice
  • 1/4 cup finely chopped onion
  • 1 cup shredded mozzarella cheese, divided
  • 1 (8-ounce) can tomato sauce
  • 3 cloves garlic, chopped
  • 1 teaspoon Italian seasoning
  • 1 tablespoon grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon black pepper
  • 4 green bell peppers
  • 1/4 cup water

What to Do

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, combine rice, onion, 1/2 cup mozzarella cheese, tomato sauce, garlic, Italian seasoning, Parmesan cheese, parsley, and black pepper; mix well.
  3. Cut off bell pepper tops and remove seeds. Evenly spoon rice mixture into each bell pepper and place in an 8- x 8-inch square baking dish. Add water to baking dish and cover.
  4. Bake 25 minutes, uncover, sprinkle with remaining mozzarella cheese, and bake 8 to 10 more minutes, or until peppers are fork-tender.

I have loved stuffed peppers since I was a very little girl. Coming from a large family, making a dinner based on rice and veggies was not only easy and healthly but also economic. I also sometimes add low fat ground beef to the rice, making it an even heartier and filling meal.

Yum!! Love stuffed peppers, and this recipe looks like it might be easier than the current recipe I use.

I would use this as a side dish and definitely use fat free ingredients.

Is something missing from recipe? Where's the ground beef!

Where is the fat and the cholesterol coming from

the Fat is from the cheese, unless you use the no fat shredded cheese, and use brown rice, which is supposed to be more healthy, and add browned ground turkey... would be a good addition.... maybe use colored peppers for something different, and chop up the the part of the pepper you cut off... add it to the other ingredients.

Looks sooo good will make tomorrow! I am going to add some browned Italian sausage to the mix. Or maybe I will serve links on the side. Either way am excited about this one. Thanks Mr. Food for some inspiration
