Balsamic chicken has an unmistakably rich flavor, and this light version tastes so good, nobody will believe it's healthy, too!

What You'll Need

  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 (5-ounce) boneless, skinless chicken breast halves

What to Do

  1. Combine all ingredients in a large resealable plastic storage bag; mix well. Seal, and marinate in refrigerator 30 minutes.
     
  2. Heat a grill pan over medium heat until hot. Place chicken on pan, discarding excess marinade, and cook 6 to 10 minutes per side, or until no pink remains and juices run clear.

I am just learning to experiment with different vinegars and marinades. I absolutely love using balsamic vinegar. What else can you put it on besides vegetables and chicken? Does it pair well with beef or pork? Thanks for posting something easy and fun to try. I love the chance to experiment with new dishes and ingredients.

We're gardeners and grow red, green and Chinese cabbage. Simple is tasty. Try using a red cabbage, they tend to be sweeter.

I made this the other night and it is "delicioso" as my daughter would say. This recipe is a keeper and easy, too. Ooh, it's so good!
