Cheesy Chicken 'n' Broccoli

Get your serving of veggies in with this comforting Cheesy Chicken 'n' Broccoli main dish meal. This hearty dish is light enough for anyone with diabetes.

What You'll Need

  • 1/4 cup slivered almonds
  • 2 (10-ounce) packages frozen broccoli florets in cheese sauce, cooked according to package directions
  • 3 cups cooked, cubed chicken or turkey breast
  • 1/4 cup diced pimentos, drained

What to Do

  1. In a small dry skillet over medium heat, cook almonds until they brown.

  2. In a large saucepan, add broccoli and cheese sauce. Stir in chicken and pimentos. Simmer, stirring constantly, until chicken and broccoli mixture is heated through. Add water, if necessary, to thin sauce. Before serving, sprinkle with toasted nuts.
