Our Spinach & Parmesan Stuffed Chicken is so easy to make, but the presentation is fancy enough to impress any guests, anytime you serve this up!

What You'll Need

  • 4 (4-ounce) skinless, boneless chicken breast
  • 1/2 (10-ounce) package frozen chopped spinach, thawed, squeezed dry
  • 1/2 cup plus 1 tablespoon grated Parmesan cheese, divided
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon grated Parmesan cheese

What to Do

  1. Preheat oven to 425 degrees F. Line a rimmed baking sheet with aluminum foil and coat with cooking spray.
  2. Lightly pound chicken between 2 sheets of wax paper with a meat mallet or rolling pin to flatten.
  3. In a medium bowl, combine spinach, 1/2 cup Parmesan cheese, nutmeg, and onion powder. Spoon 2 to 3 tablespoons onto the center of chicken breast. Roll up making sure that the filling doesn’t ooze out. Secure with toothpicks.
  4. In a small bowl, combine remaining 1 tablespoon Parmesan cheese, paprika, and pepper. Evenly sprinkle over chicken and place seam-side down on baking sheet. Coat tops of rolls lightly with cooking spray.
  5. Roast 25 to 30 minutes or until chicken is no longer pink in center.
