Fiesta Cucumber Salad

The salsa in this Fiesta Cucumber Salad gives it an extra kick. But the best part about this recipe is how quickly it comes together!
What You'll Need
- 3 1/2 cups sliced cucumbers
- 1/2 cup chopped onion
- 1 cup chunky salsa
- 1/3 cup fat-free Ranch dressing
- 1/4 cup fat-free mayonnaise
- 1 teaspoon parsley flakes
What to Do
- In a medium bowl, combine cucumbers and onions.
- In a small bowl, combine salsa, Ranch dressing, mayonnaise, and parsley flakes. Pour over cucumber mixture.Toss gently to combine.
- Cover and refrigerate at least 1 hour or until ready to serve. Stir gently before serving.
