Get in the spirit of the season by baking up this diabetic-friendly Peppermint Chocolate Java Frozen Pie from the "Two-Step Diabetes Cookbook." This yummy no-bake pie is also a make-ahead dessert, which means you'll have one less thing to make the day of!  

What You'll Need:
  • 4 cups frozen low-fat vanilla yogurt
  • 16 chocolate wafers, crushed
  • 1 tablespoon instant coffee granules
  • 16 sugar-free peppermints, crushed
What To Do:
  1. Spoon the yogurt into a 9-inch pie pan. (May want to use a fork to spread evenly.) Sprinkle the crushed cookies evenly over all and sprinkle with the coffee granules and the peppermints.
  2. Cover and freeze overnight.
Notes

Cooks Tip: Frozen yogurt thaws faster than traditional ice cream; let stand 5 minutes on kitchen counter before slicing.
