Our Beefed-Up Vegetable Stew is a super choice for anyone following a diabetic diet. That's cause we start with lean ground beef and pack it with lots of healthy veggies. After its simmered in the slow cooker for a while, it's absolutely perfect!

What You'll Need

  • 1 pound 90% lean ground beef
  • 1 (14-ounce) can diced tomatoes with basil, garlic, and oregano (no salt added)
  • 1 (16-ounce) package frozen stew vegetables
  • 1 cup water
  • 1 cube reduced-sodium beef bouillon
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper

What to Do

  1. Coat a medium nonstick skillet with cooking spray. Over medium heat, brown beef; drain.
  2. Coat a 4- to 5-quart slow cooker with cooking spray. Add beef, tomatoes, stew vegetables, water, bouillon, garlic powder, onion powder, and black pepper. Stir, cover, and cook on LOW 4 to 6 hours.

So many of these recipes list servings but not serving size. I like to know how much is considered a serving size.

Hi there! We are diligently working to update all our recipes with serving sizes, but it does take time. For this recipe, it has been updated to reflect that it's 1-1/4 cups per serving. Enjoy!
