This quick skillet dish packed with healthy veggies and cooked in olive oil is perfect for a last minute supper. Our Chicken Veggie Saute tastes as good as it looks!

What You'll Need

  • 1 tablespoon olive oil
  • 1 pound chicken breast tenders, rinsed and patted dry
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 assorted bell peppers (green, red or yellow), thinly sliced
  • 1 onion, cut in half, thinly sliced
  • 1 tablespoon lemon juice

What to Do

  1. In a large nonstick skillet over medium-high heat, heat olive oil. Add chicken, garlic, salt and pepper, and cook 10-12 minutes or until lightly browned, turning once. Remove to a plate. 
     
  2. Add peppers and onion to skillet. Cook over medium heat 8-10 minutes or until tender, stirring occasionally. Return chicken to skillet, drizzle with lemon juice, and cook for 3-4 minutes or until heated through.
