Lighter Caesar Salad

With a taste just as good as the original, no one will know that you've made their favorite Caesar salad a little lighter. Don't worry, we won't tell.
What You'll Need
- 1/2 cup light mayonnaise
- 1/3 cup low-fat (1 percent) milk
- 1 1/2 teaspoon Dijon-style mustard
- 1 tablespoon lemon juice
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large head romaine lettuce, washed and torn into bite-sized pieces
What to Do
- In a medium bowl, combine all the ingredients except the romaine; whisk until smooth and creamy.
- Place the romaine in a large salad bowl and toss with the dressing. Serve immediately.
Notes
- If you want this to be like the authentic Caesar salad, top it with croutons - but in moderation. Simply toss cubed day-old bread with a bit of garlic powder, salt, and pepper, then toast in a 300 degrees F. oven until golden.
