Farm Stand Salad

This is a fresh-tasting change of pace from your normal salads. Our Farm Stand Salad is a colorful delight that's packed with protein and veggies for a flavor combo that's so good, you'll make this a regular menu item! In fact, after just one bite, you'll think it's one of the best salad recipes around!

What You'll Need

1/2 cup vegetable oil
1/2 cup apple cider vinegar
1 tablespoon finely chopped fresh dill weed
1 teaspoon salt
1 teaspoon black pepper
1/2 pound fresh green beans, trimmed, cooked, and chilled
6 radishes, thinly sliced
1 medium head iceberg lettuce, torn into bite-sized pieces
1 large tomato, cut into 1-inch chunks
1 medium green bell pepper, cut into 1-inch chunks
1 large cucumber, thinly sliced
1 small onion, finely chopped
6 hard-boiled eggs, cut into wedges

What to Do

In a small bowl, whisk the oil, vinegar, dill, salt, and black pepper until well combined.
Place the remaining ingredients except the eggs in a large serving bowl; toss lightly. Arrange the egg wedges on top; drizzle the salad with the dressing, and serve immediately.
