Tropical Carrot Salad

Our Tropical Carrot Salad is always welcome alongside picnic favorites, deli sandwiches, literally anything! And with it being so healthy, refreshing and tasty, you'll turn to this one again and again.

What You'll Need

  • 3 carrots, peeled, coarsely shredded
  • 1 (8-ounce) can crushed pineapple, in natural juices, well drained
  • 1/4 cup chopped pecans
  • 3 tablespoons reduced-fat mayonnaise
  • 2 teaspoons lemon juice

What to Do

  1. Combine all ingredients in a salad bowl; toss to coat. Refrigerate until ready to serve.

My mom made this but added the ingredients to lemon jello making it into a congealed salad. Pretty on lettuce with a dab of mayo to garnish.
