Cheesy Cauliflower Waffles

Who says you can't have waffles on a diabetes-diet? Our Cheesy Cauliflower Waffles are packed full of the waffle flavor you love, plus some ooey gooey cheese, and even some turkey bacon bits to give it a bit of flavor! Add this to your morning routine when you want a tasty breakfast treat to change things up.
What You'll Need
- 1 cup cauliflower rice
 - 1/4 cup finely chopped onion
 - 1/2 cup liquid egg substitute
 - 1/4 cup whole-wheat flour
 - 1/4 cup shredded part-skim mozzarella cheese
 - 2 tablespoons grated Parmesan cheese
 - 1 teaspoon garlic powder
 - 1/4 teaspoon baking powder
 - 1 tablespoon turkey bacon bits
 
What to Do
- In a large bowl, combine cauliflower, onion, egg substitute, flour, mozzarella cheese, Parmesan cheese, garlic powder, and baking powder; mix well. Stir in bacon bits.
 - Heat a waffle maker and once hot, coat with cooking spray. Divide the batter evenly (about 3/4 cup each) in two sections of the waffle maker (see Tip). Close and cook 5 minutes or until golden and crispy. Remove waffles with a fork and serve immediately
