This ain't your momma's butternut squash recipe! Our Beefy Squash Bake is a hearty meal that's perfect for fall, or anytime you just want that yummy squash taste! The butternut squash is a great alternative to carb heavy potatoes! Plus, it's a great tasting way to mix it up, instead of serving up the same old bake. Whether you put this on the dinner table, or bring it to a potluck, we know this recipe will steal the show!
What You'll Need
- 1 pound lean ground beef
- 1/2 cup chopped onion
- 2 cups (1/2-inch chunks) butternut squash
- 1/2 cup chopped red bell pepper
- 1 teaspoon ground cumin
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 cup reduced sodium beef broth
- 4 ounces reduced fat cream cheese
- 1/2 cup yellow cornmeal
- 1/3 cup all-purpose flour
- 1 tablespoon sugar
- 1 1/4 teaspoons baking powder
- 1/2 cup fat free milk
- 1 tablespoon canola oil
- 1 egg
What to Do
- Preheat oven to 400 degrees F. Coat a large skillet with cooking spray.
- Over medium heat, cook beef, onion, squash, and bell pepper 6 to 8 minutes or until browned; drain liquid. Stir in cumin, ginger, cinnamon, garlic powder, and black pepper; mix well. Add broth and cream cheese and heat until cheese is melted. Spoon mixture into a 1-1/2 quart baking dish; set aside.
- In a medium bowl, whisk corn meal, flour, sugar, and baking powder. In a small bowl, whisk milk, oil, and egg. Stir milk mixture into dry ingredients until thoroughly combined. Pour batter over beef mixture.
- Bake 20 to 25 minutes or until heated through and crust is set.
